ancient Mayan sauce

While searching for waves in the southern Gulf of Mexico in the fall of 1991, I met a fisherman from the southern lowlands of the Yucatan Peninsula. This gentleman’s name was Tadeas. He was kind and knowledgeable. He ended up guiding my buddy and I around the region in search of waves and culture. 


Tadeas was of Mayan ancestry. His stories of the ancient Mayan culture were amazing. I was particularly fascinated with the math, astronomy, architecture, cuisine, medicine, art, and human sacrifice integral to the Mayan culture.



We share many meals with Tadeas. The food was very simple, yet extremely rich in flavor. I observed him making an incredible salsa before a few particularly memorable meals. I asked him about it. 

He proceeded to tell me an origin story for the salsa that involved some sort of medicinal/spiritual ritual. He said he has always made the salsa , as it has been passed down to him from generation to generation. 

The idea that this salsa Tadeas made was used in some kind of medicinal context seems relevant by today’s science. There are many benefits from the 4 ingredients. Consuming this salsa provides one with dietary fiber, niacin, potassium,manganese, vitamin B6, C and K. Also, the ingredients may reduce diabetes risk, and cardiovascular risk. 


I have created this salsa true to it’s ancient form. It is delicious. The salsa is made with the highest quality ingredients I can source. Avocado, garlic, tomatillos and habaneros. 







That’s it. No vinegar, no salt, and no chemical preservatives. This salsa is distributed in a small bottle to promote consumption before it sits around too long. Keep it in the refrigerator between meals.
